Replace Desmo heads with tappet deads?

Have picked up a n SD900 and because technicians well versed in setting desmo shims are rare (& expensive) I'm looking into replacing the desmo with tappet heads. Any info would be gratefully received. The bike has been in pieces for ten years and the engine needs a complete rebuild. Advice welcome
