Ducati 250 Jetting

Hello,
I recently purchased a 1966 250 Mk1 replica, It has a Dellorto PHBH30 carburetor on it. The engine starts well and runs to 4000. After that it is dangerous up to 8500, then it cleans out and pulls to 9000. The engine has a hi compression piston, big cam and valves. Does any one out there have an idea on the best settings for the Carb?
