Race tuning a 350 head

Hi,
I was wondering if someone could give me any infomation on what to do to tune a 350 cylinder head for racing. I'm preparing my bike for next season and Id like to get the cylinder head done and out of the way. Im struggling to find any infomation on the process of tuning it? I was told a 36mm carb would be the way to go.

Any pictures of what to do would be great.
