Can you convert a GT head to SD?

Only if you are very proficient in the use of machine tools.
You have to bore a hole for the closing rocker spindle, very accurately.
Even then, the spacing of the inlet manifold studs would preclude fitting 40mm carbs.
In short, the answer is no, unless you have access to a well equipped workshop.
