I think Ducati singles and twins are good choices for vintage racing because they are fairly well equipped and fast even stock, and pretty reliable too.
There are a number of guys in AHRMA who race BMW twins too, but they're not my cup of tea.
Don't know where you're located ...

Vmoto is organizing a series of races and parades held in conjunction with vintage car racing weekends in 2006.
