Engine overhaul - what is "must do"

I am planning to take the bike apart this winter to do some paintwork and other stuff. Since I have the engine out I probably should use this opportunity to do some service and maintenance on the engine. It is an 83 Darmah, the speedometer says 19K. The engine runs reasonable well. I have had it since 2001, haven't don much except oil and lubrication. So what should be done this winter? I am not intending to take the whole engine apart, but do what is necessary. I guess adjusting the valves is a must, but are there other adjustment and replacements that would be recommended to do at the same time?

If the standard pick-up wiring is still in place : replace.
