What oil to use in a rebuilt 1979 900 Replica number 146

Evening All,
Well, the strip and re- build of 900 Replica number 146 is coming along nicely. Shortly we start reassembly having taken most every nut and bolt apart and having got the fasteners back from BZP, the seats back from the upholstery shop, the frame, brackets and sundry parts back from paint, the crankcases, heads, barrels and parts back from vapour blasting, the chrome all re-chromed and the alloy all polished....together with a few boxes full of brand new shiny bits.
So I guess now are going to start some questions here on the Forum as I come across queries on the building back up.
General one to start, I am thinking of 20/50 mineral oil to run in on, and then switch to fully synthetic after 2000 miles - what are people's comments on oil selection and this idea please?
